黑果腺肋花楸花青素理化性质及抗氧化活性研究Physicochemical Properties and Antioxidant Activity of Anthocyanins from Aronia melanocarpa

摘要(Abstract):
为探索黑果腺肋花楸花青素在食药范畴的应用性,对其溶解性、理化性质以及抗氧化活性进行研究。研究结果表明,黑果腺肋花楸花青素易溶于水、四氢呋喃、无水乙醇,微溶于乙酸乙酯、丙酮、氯仿,不溶于石油醚;随着光照(0~6 h)增加以及温度(10~100℃)升高,花青素的稳定性逐渐下降;随着pH值(1~14)增大,花青素溶液的吸光度逐渐下降;蔗糖、葡萄糖、山梨酸钾、苯甲酸钠、柠檬酸和抗坏血酸均对花青素有不同程度的消色作用;金属离子Mg~(2+)、Na~+、Ca~(2+)、K~+对花青素稳定性的影响较小,Fe~(3+)、Cu~(2+)对其稳定性的影响较大。花青素对DPPH自由基、羟基自由基、ABTS自由基均具有清除能力,对铁离子具有一定还原能力,表明黑果腺肋花楸花青素具有一定的抗氧化作用。
