肉制品中磺胺类药物残留危害及检测方法的研究进展Research Progress of Hazards of Sulfonamides Residues in Meat Products and Their Detection Methods

摘要(Abstract):
磺胺类药物是一种性质稳定、价格低廉、抗菌性强、使用方便的广谱性抗菌剂。其在人和动物的疾病防治方面应用广泛,磺胺类药物的不合理使用会导致其在动物性食品中存在残留,通过食物链传递,最终会严重危害人体健康。文章主要对肉制品中磺胺类药物的理化性质、药物残留的来源和危害、样品前处理、磺胺类药物的检测方法进行了评价,并对其发展趋势进行了综述。
