黑胡萝卜色素的稳定性、提取及生物学活性研究进展Research Progress on the Stability,Extraction and Biological Activity of Black Carrot Pigment

摘要(Abstract):
胡萝卜是主要农作物之一,含有多种对人体有益的生物活性成分,如胡萝卜素、花青素、多种维生素等。黑胡萝卜是胡萝卜的一个品种,原产于土耳其,现在在一些东方国家,如埃及、巴基斯坦、印度和一些远东国家仍然作为传统的种植项目进行种植和消费。黑胡萝卜色素是黑胡萝卜的提取物,为天然色素,属于花色苷类。这些黑胡萝卜中的多酚对某些疾病,如不同类型的癌症、糖尿病、心血管疾病(CVD)和氧化应激等具有预防作用。同时黑胡萝卜色素因其良好的热稳定性与pH耐受性,成为潜在的食品着色剂来源。文章主要对黑胡萝卜色素的化学性质及其稳定性、黑胡萝卜色素的提取方法以及黑胡萝卜色素在几种主要代谢综合征如癌症、心血管疾病以及糖尿病方面的重要作用进行介绍。
