美拉德反应改良沙蒿胶多糖乳化特性的研究Optimization of Emulsifying Property of Artemisia desertorum Gum Polysaccharides Improved by Response Surface Methodology

摘要(Abstract):
为探究美拉德反应改良沙蒿胶多糖乳化特性的最佳工艺条件,以沙蒿籽为原料提取沙蒿胶多糖,在单因素试验的基础上选择时间、温度和pH为响应因素,以乳化性和乳化稳定性作为响应值,采用响应面法优化改良沙蒿胶多糖乳化特性的工艺并验证。结果表明,最佳工艺条件为沙蒿胶多糖∶分离乳清蛋白为1∶5,底物浓度为5%,反应时间为118 min,温度为90℃,pH为12,在此条件下得到的反应物乳化活性最大,为0.732,乳化稳定性为244.028 min。
