高浓度蔗糖乙醇分批发酵动力学研究Study on Kinetics of Ethanol Batch Fermentation with High-concentration Sucrose

摘要(Abstract):
以蔗糖为底物,按实验室酒精发酵工艺条件,接种酿酒酵母GJ2008于5 L发酵罐中发酵,每隔3 h取样分析酵母细胞数、乙醇浓度、总糖消耗情况,基于Logistic方程和Luedeking-Piret-like方程,利用Origin 9.5软件对发酵过程中酵母生长、乙醇生成、总糖消耗曲线进行动力学模拟,各自模型R~2分别为0.9929,0.9940,0.9975,绝大部分试验值和拟合值相对误差低于10%,表明模型能较好地反映和预测高浓度蔗糖乙醇分批发酵动态变化过程。
