迷迭香脂溶性抗氧化剂活性及抑制食用植物油脂氧化作用研究Study on the Activity of Rosemary Fat-Soluble Antioxidants and the Inhibition of Edible Vegetable Oil Oxidation

摘要(Abstract):
以不同食用油(大豆油、花生油、芝麻油、菜籽油和葵花籽油)为提取剂,对提取的迷迭香脂溶性抗氧化剂的抗氧化活性进行测定,并对其抑制食用植物油脂氧化作用进行研究。结果表明,采用几种不同食用油提取得到的迷迭香脂溶性抗氧化剂都具有较好的抗氧化活性,清除DPPH、ABTS、OH自由基能力以及Fe~(3+)还原力均与其质量浓度表现出一定的量效关系。其中,芝麻油提取得到的迷迭香脂溶性抗氧化剂整体活性最好,清除DPPH、ABTS、OH自由基的半数有效浓度(IC_(50))值分别为0.032,0.060,0.453 mg/mL;此外,迷迭香脂溶性提取液可显著抑制不同食用植物油过氧化物的生成,表现出优于合成抗氧化剂的抗氧化性能,为新型食用油天然抗氧化剂的应用提供了理论依据。
