不同加工方式对香蕉制品挥发性成分的影响Effects of Different Processing Methods on Volatile Components of Banana Products

摘要(Abstract):
文章研究了蒸制、煮制、油炸3种加工方式对后熟第5天的美食蕉、大蕉和香芽蕉挥发性成分的影响。结果表明,新鲜香芽蕉中共鉴定出84种物质,占总挥发性成分的59.07%,主要呈现香蕉果香、花香;新鲜大蕉中共鉴定出27种物质,占总挥发性成分的32.80%,主要呈现香蕉果香、青香;新鲜美食蕉中共鉴定出39种物质,占总挥发性成分的36.37%,主要呈现香蕉果香。与新鲜香蕉相比,经加工处理的香蕉挥发性成分发生明显变化。其中,经蒸制、煮制、油炸3种烹饪方式处理后香蕉中挥发性成分种类明显下降,分别下降了11~59种、9~56种和2~55种,但仍保留香蕉果肉香。其中蒸制对香蕉挥发性成分的保留效果比其他加工方式好。
