热风联合真空干燥对腐竹品质的影响分析Analysis of Effect of Hot Air Combined with Vacuum Drying on Yuba Quality

摘要(Abstract):
腐竹是优质的素食豆制品,具有较高的营养价值。文章研究了热风干燥(hot air drying, HAD)和热风-真空干燥(hot air combined with vacuum drying, HA-VD)方式对腐竹品质的影响。结果表明,与HAD腐竹相比,HA-VD可以有效缩短腐竹的干燥时间,HA-VD组的色泽和感官评分得到了显著的提升,质构特性和表面微观结构呈现显著性差异,蒸煮损失率和持水性呈现负相关关系,HA-VD腐竹的复水速率显著高于HAD腐竹。该研究可为腐竹行业提供腐竹干燥技术参考。
