摘要(Abstract):
苦味抑制剂是一类能降低或消除苦味物质苦味的化合物。目前已发现多种天然的苦味抑制剂,如苯乙烯酸衍生物、单磷酸腺苷、磷脂酸等。简要论述了天然苦味抑制剂的种类、效果及其应用。
