减盐酱卤小鱼中添加酵母抽提物风味提升机理分析Analysis of Flavor Enhancement Mechanism of Adding Yeast Extract into Salt-Reduced Sauced Small Fish

摘要(Abstract):
文章以酱卤小鱼为原料,将酱卤小鱼进行减盐工艺处理,分析酵母抽提物在低钠环境下对酱卤小鱼整体风味、咸味和鲜味的提升机理。对标准版酱卤小鱼、减盐版酱卤小鱼和减盐-酵母抽提物版酱卤小鱼进行了感官评价,并通过测定酵母抽提物中的游离氨基酸、呈味核苷酸、多肽分布来分析酵母抽提物对酱卤小鱼风味提升的机理。结果表明,酵母抽提物中的谷氨酸、精氨酸、丙氨酸等7种氨基酸在酱卤小鱼的咸味和鲜味提升方面具有显著作用;呈味核苷酸中5′-IMP、5′-GMP、5′-AMP在与谷氨酸协同提鲜的同时同样具有提升咸味感知的作用;而多肽中的二肽和三肽在提升咸味的同时提升了酱卤小鱼的肉味和浓厚鲜味。因此,YE在低钠环境中有着极显著的作用,后续仍需继续开发。
