摘要(Abstract):
辐照技术是一种方便快捷、无污染、无残留的优质保藏技术,对传统酿造食品的风味、质地和微生物具有一定的作用。文章针对辐照技术的原理、发展历程及在酱油、泡菜和果酒中的相关应用进行了综述,并对其发展趋势进行了展望。
