电子鼻对酿造食醋与配制食醋的区分辨识Discrimination of Fermented Vinegar and Blended Vinegar by Electronic Nose

摘要(Abstract):
在前期研究的基础上,应用电子鼻技术快速检测了台州地区生产和销售的酿造食醋与配制食醋。研究表明:以食醋中特征香味物质为参照,对检测结果进行主成分分析后,发现酿造食醋和配制食醋的落点在各自区域内而互不干扰,说明电子鼻能很好地区分台州市场上的酿造食醋和配制食醋。
