四川泡菜菌相构成、风味与质量安全性研究进展Research Progress on Microflora Composition, Flavor and Quality Safety of Sichuan Pickles

摘要(Abstract):
四川泡菜被誉为"川菜之骨",具有清爽的气味、鲜美的滋味和脆嫩的质地。泡菜独特的风味和质地性状与微生物的作用密不可分。文章首先论述了泡菜中的细菌和真菌构成以及发酵过程中挥发性风味物质与非挥发性风味物质的研究进展,并在此基础上阐述了微生物与风味物质形成关系的研究现状。最后对目前泡菜实际生产过程中可能出现质量安全的问题环节进行了总结,并阐述了引起泡菜腐败变质物质的研究现状,以期为高品质泡菜的生产与研发提供理论支持。
